We recommend making this recipe ahead of time, and then keeping it in the fridge to enjoy as a quick meal throughout the week. Head to your farmer’s market for a yummy loaf of locally-made bread, and you’re ready to go!
This recipe uses a can of artichokes. We don’t cook with artichokes regularly, but we ought to incorporate them into our cooking more often because they carry all sorts of benefits for the body!
They are a good source of dietary fiber and vitamins C and K. They also contain good amounts of folate, which can counter certain types of anemia. They are also rich in antioxidants.

CBD Superfood Chickpea-Artichoke Spread
- 2 cans of chickpeas drained and rinsed
- 1 jar marinated artichoke hearts (chopped)
- 3 cups spinach
- 1 lemon
- 2 tbsp olive oil
- CBD Superfood x Goddess Ghee Ghee
- Salt and pepper to taste
In a sauté pan, heat oil and add chickpeas. Cook for 3–5 minutes. Once cooked, mash up 3/4 of the chickpeas so a few are still in tact throughout. Add artichoke hearts and spinach, and stir. Toast bread and spread a layer of CBD ghee. Top with artichoke chickpea spread, and enjoy the creamy crunch!
