CBD Superfood Pesto Pasta with Walnuts


How many creative ways can you incorporate holiday colors into your diet?

We’ll be sharing lots of holiday themed recipes with you over the next few weeks. This @cbdsuperfood pesto pasta bowl is made subtly seasonal with hints of green from the pesto and hints of red from the noodles.

These noodles are made from red lentils, which gives them a richer color and more nutrient value than normal wheat pasta!

The lentil base allows a serving of this pasta to contain much more protein than wheat-based noodles. This pasta is also naturally gluten-free, so it’s friendly for everyone! Thanks to the lentils, these noodles are high in dietary fiber, so a serving of this recipe will help to keep your digestion balanced!

We’ve topped ours with chopped, toasted walnuts to add flavor and crunch. CBD Superfood Pesto Pasta with Walnuts

Ingredients:

- 4 tbsp chopped basil

- 3 cloves garlic

- 2 tbsp chopped walnuts

- 1 tbsp lemon juice

- 2 tbsp @cbdsuperfood coconut oil

- salt and pepper to taste

- 1 box lentil pasta

Directions:

Boil pasta in water until tender. In a food processor, blend remaining ingredients until smooth. Save some chopped walnuts on the side. Mix pasta in pesto, top with chopped walnuts, and enjoy!
