That’s why it’s good to have some lighter recipes on hand — nutrient-rich snacks that you can munch on and enjoy over a period of time instead of consuming a heavy meal.
Roasted artichoke with a creamy ghee dip is perfect nourishment for a hot summer day.
And better yet, you can make it extra fresh by using herbs from your garden!
Roasted Artichoke and Creamy Ghee Dip Recipe
- 2 full artichokes
- 3 tbsp @cbdsuperfood x @goddess.ghee ghee
- 3 tbsp local goat cheese
- 1 tsp rosemary
- 1 tsp fresh minced garlic
- 1/2 tsp fresh oregano
- 1/2 tsp fresh thyme
- pinch of salt
- pinch of pepper
Preheat oven to 425˚F. While the oven is preheating, place artichokes stem-side down in a bowl and drizzle with lemon juice. Slightly separate the artichoke leaves with your hands. Rub the leaves with olive oil. Wrap each artichoke with aluminum foil. When the oven is ready, place in a baking dish for about 1 hour 20 minutes, or until the artichokes are sizzling.
In the last 20 minutes of the baking time, combine remaining ingredients in a bowl and mix well. Remove artichokes from the oven and place on a platter with the creamy dip. Break off an artichoke leaf and dip in!
