CBD Superfood Strawberry Spinach Salad & Lemon Poppy Seed Dressing

During the luteal phase of one’s moon cycle, estrogen and progesterone levels surge and then wane. As a result, it is important to consume foods that produce serotonin and are high in magnesium so you can feel energized and joyful amidst these hormonal fluctuations. Spinach is the perfect luteal phase food, and we love finding creative ways to enjoy this yummy vegetable!
This salad is sweetened with candied pecans and strawberries, and doused in a delicious, lemon-poppyseed @cbdsuperfood dressing! Check out the yummy recipe below to enjoy it on your own.
CBD Superfood Strawberry Spinach Salad with Lemon Poppyseed Dressing
- 3 c. spinach
- 1/4 c. candied pecans
- 1/4 c. sliced strawberries
- 1/4 c. olive oil
- 2 tbsp CBD Superfood Coconut Oil
- 1 tbsp maple syrup
- 1 tbsp lemon juice
- 1 tsp poppy seeds
- salt and pepper to taste
- nutritional yeast to taste
Combine spinach, candied pecans, and sliced strawberries in a bowl. Set aside. In a small dish, mix all remaining ingredients except for nutritional yeast. Taste and adjust salt, pepper, and maple syrup as desired. Mix into salad. Sprinkle salad with nutritional yeast, and enjoy!
