CBD Superfood Thai Curry

😋 Thai curry is a nourishing comfort food. Its rich, creamy broth and vibrant flavors will warm you from the inside out!

We finished off this Thai-inspired tofu and vegetable red curry with a few tablespoons of @cbdsuperfood golden spice coconut oil for a combination of traditional Thai and Indian spices, and a ton of anti-inflammatory health benefits.

It’s great for meal prep, too — make a batch and you’ll have several meals for the week! 🌿

🍛Thai Tofu & Veg Curry Recipe

1 onion

3 cloves garlic

2 carrots

1 package organic tofu

1 red pepper

1 yellow pepper

1 head of broccoli

1 zucchini

1 tbsp grated ginger

1 can full fat coconut milk

6–8 cups water

1 tbsp Thai red curry paste

Juice of 1 lime

3 tbsp @cbdsuperfood golden spice oil or ghee

(Serves 8–10)

Sauté onions, carrots, and garlic until onions turn translucent. Then add chili paste, ginger, tofu, and vegetables. Stir to coat vegetables with the paste then add coconut milk and water. Bring to a boil then let simmer for 20–30 minutes. Finish with @cbdsuperfood golden spice coconut oil or ghee, cilantro, and salt and pepper to taste. Pair with a serving of rice and enjoy!
