We’re all about sharing nutritious snacks and side dishes, and this one is a definite crowd pleaser!
Street corn is always a welcome sight when you’re traveling and feeling hungry. Traditional street corn is made with mayo or crema and cotija cheese, but we decided to make a vegan version that also incorporates our @cbdsuperfood Golden Spiced Coconut Oil!
The corn carries these warm spices perfectly, and cilantro and @celticseasalt add a subtle and savory tang. Make a small batch for you and a loved one, or a big batch for a fall potluck! Check out our recipe below, and head to your farmer’s market to catch the last few ears of corn!
CBD Superfood Street Corn Recipe
- 1 ear of corn, husked
- 1 tbsp regular coconut oil
- 1 tbsp CBD Superfood Golden Spiced Coconut Oil
- Handful of chopped cilantro
- wedge of lime
- sprinkle of Celtic Sea Salt
- sprinkle of pepper
Boil corn for about 5 minutes, then transfer to a hot cast iron pan with oil (or a grill) and brown each side of the corn. Spread on CBD golden spiced coconut oil, and sprinkle cilantro, lime, @celticseasalt and pepper to taste!
