Many of our side dishes stand strong on their own, but can be quickly made into a full meal simply by adding some @eathempehhempeh!
This golden spiced quinoa salad is filled with tomato, cucumber, and scallions for a flavorful and colorful flair. It is hearty and wholesome on its own (and is the perfect addition to any potluck!) but we added a few slices of Salt & Pepper hempeh to make this a complete meal.
CBD Superfood Golden Spiced Quinoa Salad Recipe
- 3 c. cooked quinoa
- 1 heirloom tomato, diced
- 1 medium cucumber, diced
- 1/2 c. scallions, packed
- 1 tsp salt
- 1 tsp pepper
- 1/4 c. CBD Superfood Golden Spiced Ghee
- Prepare quinoa as directed on packaging.
- Chop and dice all vegetables.
- Heat a small saucepan on the stove and remove from heat. Add Golden Spiced Ghee to melt.
- Combine all ingredients in a bowl. Let chill in fridge, and serve (for extra protein, sauté some Smiling Hara hempeh and add it on top).
