Warm, savory recipes have been finding their way into our @cbdsuperfood kitchen lately! On a chill fall evening, our @cbdsuperfood x @eathempeh stuffed squash is the perfect cozy meal to share with a loved one.
This recipe also features local apples, which are in the height of their harvest season here in Appalachia.
We tend to associate apples with sweet baked goods, but they can be delicious in savory recipes, too! Combined with sautéed onions, kale, and salt and pepper steak @eathempeh hempeh, apples add a touch of sweetness that combines well with the subtle flavor of acorn squash.

CBD Superfood x Smiling Hara Stuffed Squash Recipe:
- 1 package Smiling Hara Salt and Pepper Steak Hempeh
- 1 acorn squash
- 1/2 onion
- 1 clove of garlic
- 3/4 c. chopped apple
- 3/4 c. chopped kale
- 1–2 cups cooked rice
- 1 tbsp CBD Superfood Coconut Oil
- salt / pepper to taste
Preheat oven to 350˚. Cut an acorn squash in half and clean out the seeds (set aside and save to roast — stay tuned for a roasted squash seed recipe coming soon!). Drizzle in olive oil, salt and pepper. Place in a baking pan face up and roast for about 45 minutes.
Saute chopped onion and minced garlic for about 5 minutes in olive oil over medium heat until onions are soft. Chop hempeh into cubes and add to the plan. Cook for an additional 5 minutes. Add cubed apple, chopped kale, and salt and pepper to taste. Stir in rice. Remove from heat and stir in 1 tbsp. Of CBD original coconut oil. When squash is fully cooked, place on a plate and fill with stuffing mixture.
